Baked Cinnamon Apples with Walnuts

Why it works

Warm spiced fruit and nuts scratch the dessert itch with fibre, omega-3 and no added sugar - the apples turn sweet on their own as they soften.

Ingredients

  • 4 apples, halved and cored
  • 1/3 cup walnuts, chopped
  • 1 tsp ground cinnamon
  • 1 pinch ground nutmeg
  • 1 tbsp extra-virgin olive oil (or a little butter)
  • to serve plain Greek yogurt

Method

  1. Heat the oven to 190C (170C fan).
  2. Sit the apple halves cut-side up in a baking dish, trimming a sliver off the rounded side of any that will not sit level.
  3. Pile the chopped walnuts into the cored hollows. Dust generously with the cinnamon and nutmeg and drizzle with the olive oil.
  4. Pour a splash of water (about 3 tablespoons) into the base of the dish to stop the apples catching.
  5. Bake for 25-30 minutes, until the apples are completely soft when pierced and the walnuts are toasted and fragrant.
  6. Serve warm with a spoon of cold Greek yogurt, and spoon over any syrupy juices from the dish.

Swaps

Pears work beautifully - reduce the time slightly as they soften faster.

FAQ

How do I make healthy desserts without sugar?

Ripe fruit (banana, dates, apple), cocoa, cinnamon and vanilla give sweetness and flavor without refined sugar. Chocolate avocado mousse, blended frozen berry 'nice cream' and baked cinnamon apples are ready in minutes.

How do I eat more fiber without getting gassy?

Increase fiber slowly over a few weeks and drink more water alongside it; that gives your gut time to adapt. Oats, berries and cooked vegetables are usually easier to start with than a big bowl of beans.
