Two-Minute Berry Nice Cream
3 min · 2 servings

Why it works
Frozen fruit blended to a soft-serve texture is dessert with fibre and no added sugar. The trick is to use very little liquid so it stays thick like ice cream rather than turning into a smoothie.
Ingredients
- 1 banana, sliced and frozen
- 1 cup frozen mixed berries
- 2-3 tbsp plain Greek yogurt or milk of choice
- 1/2 tsp vanilla extract
Method
- Take the frozen fruit out and let it sit for 3-4 minutes - slightly softened fruit blends far more easily and saves your blender.
- Put the banana, berries, 2 tablespoons of yogurt and the vanilla into a food processor or high-speed blender.
- Blitz in short pulses, stopping often to scrape down and push the fruit onto the blades. It will look crumbly, then suddenly come together.
- Only add the last spoon of yogurt if it absolutely will not turn over - you want a stiff soft-serve, not a pour.
- Eat straight away for soft-serve, or scrape into a tub and freeze for 30 minutes for a firmer scoop.
Swaps

FAQ
How do I make healthy desserts without sugar?
Ripe fruit (banana, dates, apple), cocoa, cinnamon and vanilla give sweetness and flavor without refined sugar. Chocolate avocado mousse, blended frozen berry 'nice cream' and baked cinnamon apples are ready in minutes.
What are the best anti-inflammatory foods?
The most cited are fatty fish (salmon, sardines), extra-virgin olive oil, berries, dark leafy greens, broccoli, legumes, nuts, flax and chia seeds, turmeric, ginger and green tea. They work best as part of a routine, not as a single fix.
